Recipe: Coconut Cashew & Quinoa Granola

Homemade granola is easy to throw together - you probably have everything you need in your cupboard right now! Just grab your favorite spices, some Toasted Quinoa Flakes, and a few other things and start baking.

Ingredients

1 1/2 cups rolled oats
1 1/2 cups I Heart Keenwah Toasted Quinoa Flakes
1/2 cup unsweetened coconut flakes
1 cup cashews
1/2 Tbs ground cinnamon
sprinkling of sea salt
1/2 Tbs ground cinnamon
1/4 cup coconut oil
1/3 cup maple syrup
1 Tbs coconut sugar
1 tsp vanilla extract

Directions

  1. Preheat oven to 340 degrees F. Line a baking sheet with parchment paper. 
  2. In a small saucepan, heat coconut oil, maple syrup, sugar and vanilla over medium heat until mixture starts to bubble.
  3. In a medium mixing bowl, stir together the dry ingredients (oats, quinoa flakes, coconut flakes, cashews, cinnamon, and sea salt).
  4. Add the coconut oil mixture to the dry ingredients, and stir until well combined.
  5. Spread on prepared baking sheet, and bake for 20-25 minutes (stirring the mixture at the halfway point to make sure the granola doesn't burn).
