Toasted Quinoa and Heirloom Tomato Salad

Is your summer garden overflowing with bright, juicy tomatoes? This fresh salad puts them to use, along with a homemade garlic tahini dressing made with EatSpice probiotic garlic powder. The Toasted Quinoa and almonds add protein, but feel free to top with tofu or tempeh for an even heartier meal.

Ingredients

  • 1 cup I Heart Keenwah Toasted Quinoa, cooked and cooled
  • heirloom tomatoes
  • fresh basil leaves
  • slivered almonds

Dressing:

  • 1/4 cup tahini
  • 1/3 cup water
  • juice of 1/4 lemon
  • salt and pepper to taste
  • 1 tsp maple syrup
  • 1 Tbs EatSpice Garlic

Directions:

  1. Combine dressing ingredients until emulsified (start with tahini and maple syrup and slowly add water and lemon until smooth, then season with spices).
  2. Pour over cooked quinoa, heirloom tomatoes, basil leaves and almonds.
