Recipe Collab: Tomato Basil Quinoa Salad

Our three-person team is split between Chicago and New York, which just so happen to be the locations of Gotham Greens' urban rooftop greenhouses. We're big fans of their pesticide-free produce and are excited to pair their fresh basil with our Toasted Quinoa in this simple recipe. 

 
 

For the salad: 

  • 1 cup I Heart Keenwah Toasted Tricolor Quinoa, cooled
  • 1 cup (1 full packet) Gotham Greens fresh basil, roughly chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 cup black olives

For the dressing: 

  • 1 tsp Dijon mustard
  • 1 tsp vinegar
  • 2 Tbs olive oil
  • juice of 1/2 lemon
  • sprinkling of salt and pepper

Directions: 

Whisk together the dressing ingredients and pour on top of quinoa salad. Mix and serve.
