Recipe Collab: Radicchio-White Bean Salad
This radicchio-white bean salad gets a flavor boost from a tangy, spicy and somewhat sweet salad dressing made with Sir Kensington's Spicy Brown Mustard (plus secret ingredient: pomegranate molasses). We added cooked Toasted Quinoa and walnuts for a little extra protein and crunch.
Ingredients
- 1 head radicchio, chopped
- 1/2 cup white beans (canned white beans or Greek giant beans)
- 1/2 cup cooked I Heart Keenwah Toasted Quinoa
- handful of walnuts
- chopped scallion
Dressing:
- 2 tsp Sir Kensington's Spicy Brown Mustard
- 2 tsp pomegranate mollasses (or maple syrup)
- juice of 1/2 lemon
- 1 tsp dried thyme
- 1/3 cup olive oil
- sprinkle of sea salt and fresh ground pepper
Directions
Whisk together dressing ingredients until emulsified. Pour on plate with arranged chopped radicchio, beans, quinoa, and walnuts. Garnish with chopped scallions.
