Recipe: Coconut Cashew & Quinoa Granola
Homemade granola is easy to throw together - you probably have everything you need in your cupboard right now! Just grab your favorite spices, some Toasted Quinoa Flakes, and a few other things and start baking.
Ingredients
1 1/2 cups rolled oats
1 1/2 cups I Heart Keenwah Toasted Quinoa Flakes
1/2 cup unsweetened coconut flakes
1 cup cashews
1/2 Tbs ground cinnamon
sprinkling of sea salt
1/2 Tbs ground cinnamon
1/4 cup coconut oil
1/3 cup maple syrup
1 Tbs coconut sugar
1 tsp vanilla extract
Directions
- Preheat oven to 340 degrees F. Line a baking sheet with parchment paper.
- In a small saucepan, heat coconut oil, maple syrup, sugar and vanilla over medium heat until mixture starts to bubble.
- In a medium mixing bowl, stir together the dry ingredients (oats, quinoa flakes, coconut flakes, cashews, cinnamon, and sea salt).
- Add the coconut oil mixture to the dry ingredients, and stir until well combined.
- Spread on prepared baking sheet, and bake for 20-25 minutes (stirring the mixture at the halfway point to make sure the granola doesn't burn).
Serves 8
