National Pi Day Recipe: Vegan Chocolate Peanut Butter Pie
3.14 is National Pi(e) Day! What better way to celebrate than with this delicious recipe from Chicago's own vegan pie bakery, Pie, Pie My Darling? This vegan recipe features our brand-new Chocolate Puffs which you can buy here. Be sure to save some filling to pipe on top of the pie so yours looks as cute as this one!
Ingredients:
Crust:
1 box Back To Nature Peanut Butter Sandwich Cookies, ground up in a food processor
5-6 Tbs melted vegan butter
Peanut Butter Filling:
8 oz vegan cream cheese
8 oz So Delicious Coconut Whip
3/4 cup organic powdered sugar
1 cup creamy peanut butter
Pinch of salt
Ganache:
1/8 cup soy milk
3 tbs vegan butter
5 ounces vegan chocolate chips
For the Crust:
Mix together the melted butter and ground peanut butter cookies and press into a 9" pie tin. Bake at 325 for 10 minutes, then let cool.
For the filling:
With a stand mixer or hand blender, blend together the vegan cream cheese and powdered sugar. Add the peanut butter and blend. Add the coconut whip and salt, and blend until smooth and creamy. Pour into the cooled pie crust and chill.
For the Ganache:
Boil the soy milk, then turn off the heat and add the butter and chocolate chips. Let it sit for one minute, then begin to whisk until smooth and shiny. Pour on top of the peanut butter filling, smooth it out as desired, then chill.
