Banana Chocolate Chip Squares

Do you like bananas and dark chocolate? Well we have the recipe for you. This recipe is based on a classic banana brownie square recipe. Ours is veganized and with some healthy swaps (minimal sugar, wheat flour swapped out for quinoa flakes, etc). These squares are crispy on the outside, gooey on the inside, with a chocolate-banana aroma. Need we say more?

Ingredients

  • 2 ripe bananas, mashed

  • 1/4 cup brown sugar

  • 1/4 cup turbinado sugar

  • 1/2 cup tahini

  • 1/4 cup vegan butter

  • 1 flax egg (1 tsp ground flax seeds + 2 tsp water, mixed)

  • 1 tsp vanilla extract

  • 3/4 cup I Heart Keenwah Toasted Quinoa Flakes, ground into flour in coffee grinder

  • sprinkling of sea salt

  • 1 cup vegan dark chocolate chips


Directions

  1. Preheat oven to 350 F.

  2. Mix mashed bananas, brown sugar, turbinado sugar, tahini, butter, flax egg and vanilla until smooth.

  3. Add quinoa flakes and salt. Mix until a dough is formed.

  4. Fold in dark chocolate chips.

  5. Spread mixture on greased 9x9 inch baking tray.

  6. Bake for 25-30 minutes. until edges are golden.

  7. Allow squares to cool completely before cutting.
