This recipe is a simple one, great for weeknights. And the best part is that nearly anyone can make this one. Quinoa lentil pilaf. As if quinoa didn't already have enough protein and nutrients in it, we had to go ahead and pair it with green lentils. The kick here though comes from the cumin and turmeric (which is healthy in its own right). Can you smell the aroma of middle eastern kebab or a nice indian basmatic rice pilaf? Yeah, we're trying to channel that vibe here.
2/3 cup Toasted Quinoa
1/3 cup green lentils
2 cups of water
1 clove finely chopped garlic
1 tsp cumin seeds
1/2 tsp turmeric powder**
pinch of course salt
1 tbsp of olive oil
Cook the Toasted Quinoa as directed on the package. In the meantime, combine the olive oil, cumin seeds and turmeric powder in a frying pan. Heat the oil and allow the fragrance of the spices to fill the room. Then drop in the chopped garlic, cook for about one minute, and pour spice mix into the cooked quinoa and lentils. Add a pinch of salt. Stir and serve.
Makes an amazing side dish to be paired with some indian inspired vegetables or hummus and grilled meat/veggies.
